1518 (ichi go ichi e) means "Time lost cannot be recalled" in Japanese. Hosted by chef 👨🍳 Takafumi Suzuki. He wants to treasure the moment we have. The essence in the tea ceremony, also my motto of life and principle of cooking. After the pandemic, we felt the importance of being with other people. Here, he wants to share this moment with people through food using the best seasonal ingredients, from our home grown vegetables to locally sourced fish and meat made in Japanese cooking methods. And to reflect my DNA, I will incorporate rice into the menu, not only is rice one of the most versatile ingredients in cooking, it represents who I am and where I am from. Food is not completed without rice in Asian food culture, especially in Japanese households. Koji, Sake and Miso are all made from rice.
