1518 (ichi go ichi e) means "Time lost cannot be recalled" in Japanese. Hosted by chef 👨‍🍳 Takafumi Suzuki. He wants to treasure the moment we have. The essence in the tea ceremony, also my motto of life and principle of cooking. After the pandemic, we felt the importance of being with other people. Here, he wants to share this moment with people through food using the best seasonal ingredients, from our home grown vegetables to locally sourced fish and meat made in Japanese cooking methods....
